This sake was brewed using the first strain of sake yeast isolated in 1895 and a 140 year old variety of Koji. It has been aged in the bottle for 1 year after pressing, which intensifies its power and its Umami notes.
Japanese "Début" sake will go wonderfully with your cheese such as Roquefort. But also to accompany fatty or grilled fish.
